New toque Joe Marcus (formerly of Picholine) is only the third chef in the more than 30-year history of the restaurant. Mr. Marcus?s Contemporary American menu features dishes such as stuffed zucchini flowers with smoked ricotta and tomato-fennel sauce, and pan-seared scallops with smashed peas, prosciutto, and preserved lemon emulsion.
